Grapes were harvested and immediately pressed to liberate the free fun juice. The juice underwent a cold fermentation that lasted more than 20 days. 30% of the blend was aged on direct lees contact and stirred twice a week. This Sauvignon Blanc has brilliant clarity, beautiful yellow-green color, with aromas of grapefruit, figs, apricot, candied lemon. The wine is all Sauvignon Blanc with medium body, crisp acidity and nice balanced finished.
