Mossback Chardonnay is an elegant example of fruit harvested from the Aquarius Vineyard in the heart of the Russian River Valley. This wine was primarily cold-fermented to accentuate the classic characteristics of grapes grown in this cool-climate, Sonoma County appellation. Beautiful pear and crisp green apple aromas lead to flflavors of peach, green fifig and lime zest. 20% percentage of the wine was barrel fermented and aged to add a lush texture with notes of vanilla and butttterscotch. This is a bright and vibrant Chardonnay with a mineral finish that blends with the creaminess from the French-oak aging.
Pair this with spring rolls, a lobster bisque or pasta in a cream sauce with truffles.
