Hand-harvested. Partially fermented full cluster (32%) intemperature-controlled, stainless steel tanks on indigenous yeasts. Aged30% in clay jars and 70% in older French oak barrels. Bottled unfined andunfiltered.
Aromas of spice, licorice, red summer berries.Structured yet suave, with silky tannins. Very long. Pairing suggestions: Roast pork with herbs; chicken with wildmushrooms.
