This is very traditional Chablis from a prestige 1er Cru vineyard, the ‘Mont de Milieu’. Fermentation and maturation is classically modern being cold fermented to capture the purity of fruit. Maturation in tanks and avoiding any barrell ageing, preserves the fresh steely flavors and unique influence of the chalky vineyard soils. Expressive and full floral aromas precede a delightful flavored and intense dry wine where mineral characteristics abound. Drink as an aperitif and with salmon, asparagus, grilled vegetables and goats cheese.
