Selection and blending build upon the black cherry, raspberry and cardamon core of our wine. By selecting wine from barrels where the wine is slightly softer, not only do you change the palate perception but the black cherry aromatics become stronger. Add in a judicious amount of Bordeaux cuvees and a bit of all spice and herbs de Provence add complexity to the aromatics and flavors. The accompanying increase in tannins tends to broaden the palate structure, as if the normally vertical focus of our wine is extended into the width of the palate, as well as slightly sharpen the aftertaste and leaving even an emptied glass still evoking the aromas and flavors of the wine. All together a sensual and intriguing combination.
